Sarciado Flying Fish/Isdang Lawin/ Timon timon Fish (my version)


Are you tired of Fried Fish? You think it’s super dull? try this Sarciado Fish recipe using timon timon, with a special twist. 

Flying fish or what we call isdang lawin or timon timon in bicol is a popular fish in the Bicol region. Can you believe that this fish could fly above sea level? Well, this fish can fly and land on my kitchen for as long as he want 😛 This is great for frying, with coconut milk based sauce or by using it in sarsiado recipe.   • Timon timon fish. 4 pieces. You can use Galunggong, Dory,  maya maya, Dalagang bukid. Or fish of your choice
Flying fish/Isdang Lawin/Timon timon
  • 4-5 Tomatoes diced into small pieces


  • 1 medium sliced onion
  • 3-4 cloves of Garlic crushed
  • Ginger a size of your thumb sliced
  • 1 Celery stalk with leaves sliced
Saute essentials: Ginger, Onion, Garlic, Celery
  • Sliced Spring Onion for Garnishing


  • 3 tbsp Sesame oil


  • Fish sauce for seasoning
  • 1/4 cup water
  • All purpose flour 3 tbsp diluted in water


  • 1 medium raw egg scrambled
  • Vegetable oil
  • Salt and pepper to taste


  • Coat the fish with salt and flour
  • In a hot pan with vegetable oil, deep fry your fish and set aside


  • In your casserole, Saute Garlic, onion, Celery, Ginger
  • Add the tomatoes until fully cooked
  • Add the water
  • Add the flour diluted in water
  • Spread the scrambled raw egg around your casserole
  • When the egg is a bit cooked, try mixing it slowly


  • Make sure you don’t fully cook the egg
  • Season with Salt, pepper, Fish sauce
  • Add sesame oil
  • Add the fried fish and pour the sauce around the fish
  • Garnish with spring onion
  • Add long Sili/Green Chili



  • Serve with Steamed hot rice
